Upside-down tart with caramelised apples

It is one of the most elegant desserts in European cuisine. The slightly sour Idared apples, combined with buttery caramel and crispy puff pastry, create a wonderfully harmonious blend of flavours.

Preparation

  1. Melt the sugar and butter in a frying pan or baking tin.  
  2. Arrange the apple halves in the pan and caramelise for 10–15 minutes.  
  3. Cover with the puff pastry.  
  4. Bake for 25–30 minutes at 190 °C.  
  5. Once baked, turn the tart out onto a plate.
